You put them on their backs and then draw a six inch line or so with your finger in front of their faces. Once they've stopped struggling you can let go and then they just sit there. You can clap your hands or make a loud noise and then they snap out of it.

There's a Blue cuckoo hen, black with white (black mottled?), blue rooster with a lot of brassiness, blue quail hen, and another rooster which I don't know the name for his coloring.
