We’ve done green tomato ketchup (from my grandpa recipe), chow-chow (from YouTube recipe), and a jalapeño salsa verde (from our own concoction).
We also slice and “pickle” green tomatoes for frying to use up last of them before frost
I think my cucumbers are almost done……I still have 2 overflowing 5 gal buckets after peeling and slicing a bunch last weekend. We’re doing some as pickles and some tomato and cucumber salad
6 pints of pickles and 4 pints of banana peppers…….getting the canner and more jars ready for squash. Haven’t even put a good dent in the 5 gal bucket of cucumbers and definitely need more jars 🙈
