I don’t candle a 100% usually. Most of the time with quail eggs I just go straight to hatch only handling them when removing from the trays at lockdown. Hatch too many birds to spend time candling.
One of our favorite “go-to’s” is with plucked birds skin on. Toss in corn starch w/ Cajun seasoning, smoke at 150 for an hour, bump to 375 then dredge in sauce, and grill 30-35 min.
Sauce:
1/2 cup Siracha
1/2 cup honey
1/4 cup soy
2 TBS sesame oil
Whole quail or chicken wings is what we use...
Hatching some replacements for me and rest will be sold. Have double racks of chickens in the 2nd cabinet. Fan shot craps in the 3rd cabinet yesterday so I have another one on the way. Those eggs were moved to hatchers to cook until the fan comes in.
