    Good afternoon, everyone. I’m trying an Escoffier recipe from Le Guide Culinaire today. It’s called Cotelettes de Saumon. Not sure if it will be successful or not. I actually think I made a mistake in the sauce Bechamel. We will learn if it was successful or not in a few hours.

    The following website has everything you need. https://cheesemaking.com/ Yes, you do need a cheese press. You also need a lot of other things, like mesophilic starter, rennet, cheese salt, that type of stuff. I got the recipe from this book.
