There is a product available from Benjamin Moore that is made to stop existing paint from peeling and flaking in food prep areas. There are probably a few other manufacturers as well. If memory serves me correctly I think it is called PeelStop. Way easier then trying to strip the paint.

Too cool and nice work! I would use some small trim, like quarter-round, and nail it up to the perimeter of the wallpaper. Follow that with a quick coat or 2 of some Thompson's WaterSeal and I bet it will last at decade.

If I was building this I would be sure to use a "washer head" screw vs. a "flush head" screw. Those look like injection molded plastic and the 'V' shaped head will cause cracks and improper clamping force. The top pic, below, is the proper style. The pics on their site show the other 2nd pic type.
