Scraping together whatever I can find in the recesses of the fridge. Whole family is out of town, so I don't HAVE to cook

As I am on my first day of 6 11 hour shifts, I planned ahead and roasted a (home grown!) chicken last night. Tonight will be Chicken something. And the next night...and the next night...

Last night, I plunked some country style pork ribs in a marinade so that I could put them right on the grill when I get done with work (11 hour shift- ugh). I will put some fingerling potatoes on the grill too, and toss together a salad. And I will be having a largish glass of pinot noir as well.

Tonight I am making a stuffed turkey breast, saffron risotto and corn on the cob.

Tonight we are having 9 bean soup and "Rachel"s ( like a rueben, but with turkey instead of corned beef)

Frozen pizza and broccoli

Hand tossed bacon cheeseburger pizza, with dill pickle slices!

Seared diver scallops over chanterelle mushroom risotto. Still have to come up with a veg...

Kung Pao chicken (home raised of course!) and extra rice to have tonight and to use tomorrow for fried rice.

I concocted a chicken and green chile enchilada casserole. I very craftily pureed green peppers and onions into the verde sauce so the kids wouldn't know they were there. Worked like a charm!

Leftover night tonight. Feeding the kids the chicken alfredo pizza in the fridge, then going to a grown up dinner at a friend's place.

Skillet shrimp and rice with chorizo.

Shells stuffed with a venison/garlic/cheese mixture, tossed salad, asiago bread and some leftover cheddar broccoli soup.

Waiting for a salmon quiche to come out of the oven Also made rolls and a veggie succotash.

Tonight I am making Pork fried rice. We get a whole local hog every year, raised on a pasture with lots of oak trees. The buggers gobble up a LOT of acorns!

Leftover night- but fresh baked rolls also and tossed salad to round things out a bit. I could just have salad and rolls and be happy!

Bloody Mary bread is in the bread machine, have a big pot of stock to throw bits and pieces from chicken processing today into So tonight will be grilled cheese sammies and soup for dinner!

For father's day dinner we are having grilled corn and NY strip steaks, macaroni salad with shrimp, and I have a strawberry rhubarb pie baking right now.
