As I am on my first day of 6 11 hour shifts, I planned ahead and roasted a (home grown!) chicken last night. Tonight will be Chicken something. And the next night...and the next night...
Last night, I plunked some country style pork ribs in a marinade so that I could put them right on the grill when I get done with work (11 hour shift- ugh). I will put some fingerling potatoes on the grill too, and toss together a salad. And I will be having a largish glass of pinot noir as well.
I concocted a chicken and green chile enchilada casserole. I very craftily pureed green peppers and onions into the verde sauce so the kids wouldn't know they were there. Worked like a charm!
Tonight I am making Pork fried rice. We get a whole local hog every year, raised on a pasture with lots of oak trees. The buggers gobble up a LOT of acorns!
Bloody Mary bread is in the bread machine, have a big pot of stock to throw bits and pieces from chicken processing today into So tonight will be grilled cheese sammies and soup for dinner!
For father's day dinner we are having grilled corn and NY strip steaks, macaroni salad with shrimp, and I have a strawberry rhubarb pie baking right now.
