Sauerkraut! It is super easy to make at home (we just did it). The thing I found interesting is there is NO Vinegar involved in the process. Just cabbage and salt. Also, pretty much anything fermented.

I don't like the metal ones either, but I use ACV in my water. Here is the 3.5 gallon one. TS has not had the 1 gallon ones the past 3 times I have gone to look. Want extra ones to just put around the yard!

Had to go check them, LOL! They are 1 gallon each. Pretty sure I paid $10 for each of them. I keep 2 in each coop. You can see how the hang and sometimes one will get knocked off balance and lose all it's water, so I always have a back up.

I don't have any but there are a BUNCH on Craigslist, starting around now through September they seem to be listed at rock bottom prices. I guess it has to do with the heat and people not wanting to spend so much time on them.

I have a Rooster. If they are clean, they are not washed and left at room temp. If they are dirty, they are washed and put in the fridge.
It seems to be just personal preference.
