It looks like you can use either corn starch or almond flour in custard. Baking a custard is iffy and can do what yours did. It is safer to make the custard on the stove and then pour it over the rhubarb. If you want to brown it, use a torch.

When I saw them, I thought they looked like brook trout. German brown trout are more brown than green.

I bake a lot of angel food cake when the Girls are laying well! We usually have strawberries or raspberries with it.

I would not use waxed paper again either! Those old pans are amazing.

The baking and pan prep must be different! The one I use is 375 for 40 minutes. I do use a tube pan that I bought in the early 1980s, so it is my oldest cooking pan!

I am sorry about the oven! Replacing the fan should be an easier fix-- there should be some generic models that will work.
