    I've run into the same problem when day 10 just wasn't convenient to do my baking. I try to plan as early as possible and delay the first feeding for 1-2 days. I've also delayed the day ten feed & bake up to 3 days and the batter and bread were fine. You will notice the need to burp the longer...

    My mother was born as the depression was ending. However being #7 of 15 kids on a farm cost effective & what you hand on-hand recipe's were a must! They had the gambit of farm animals and did their own butchering. Unfortunately I never knew her parents as they had passed away before I was born...

    Here's a great link to Amish Friendship Bread. I was given a starter but came across this site researching MIL's suggestion you can do way more than what the recipe calls for. She was right, there are MANY variations on the bread itself as well as waffle & pancake recipes...
