Why don't you dampen the food a bit? Mine seem to prefer the softer texture, too. AND, you waste less food since the dust is incorporated with this technique.
My very first hatch I wrote down all the info on the chicks. Colour of egg, egg size, colour of chick, number of toes, etc.
Of course, all this information was useless as they feathered out for the most part! But I could keep an eye on those I liked most and tell them apart. Mainly my poor...

DO NOT WORRY about opening the incubator to straighten out eggs, or even taking them out to check/candle them. Even Mommas get off the nest when the eggs are hatching.
Oh, I have several hens that go broody, just not that early in the year! Heck, it's still dipping below freezing (currently -3c). I've started letting one of the banty Cochin sit. I would much rather have the eggs brooded naturally.

I was the same way last year, but my pessimism took over and now I'm just happy once they've hatched. Then again, all these power outages have kind of killed me inside. Like my eggs.
Opening the incubator is not an issue. I do it all the time. Heck, had a brief power outage that cooled the eggs completely (including my Survivor eggs) and they did fine.
Place a damp sponge or folded face cloth in there with them to keep the humidity up if you're worried. :hugs
