4H Mom's "Surprise" Meatloaf

My kids love this one. Its super easy, and I always liked it because its a whole meal right in one pan. Less after dinner clean up!

(If you have you own meatloaf recipe, you can still use it) Each slice of meatloaf contains a 'surprise'!

You will need:

2 lbs ground beef
1 lb ground chicken
2 large eggs
seasoned breadcrumbs
canned whole white potatoes (or red skin potatoes if you dont like those)
corn, peas, carrots or other vedgies you enjoy.
1 tsp Mrs Dash Table Blend
salt, pepper, garlic salt to taste
1 tsp Soy Sauce
1 cup shredded cheese
butter

What to do:

Mix together meats, seasonings, eggs, soy sauce, and milk until smooth. Add bread crumbs until mixture pulls away from the sides of the bowl and will hold a ball shape when formed. Divide mixture in half and lay it in the bottom of your pan. Press flat and use your fist to make a "valley" in the center running lengthwise down the meat mixture. Fill the "valley" with your vedgies, potatoes, and half of the shredded cheese. Top with a few small dollops of butter. Use the remaining half of the meat mixture to top the meatloaf and seal the edges by pinching them together and smoothing them (like working with PlayDoh!) until you can see nothing 'peeking' out. Work the whole thing into more of a loaf shape and center it in the pan. Around the loaf, put any remaining vedgies you have left. Top them with a few small dollops of butter. Reserve the 1/2 cup of shredded cheese for later. Bake loaf at 350 for 1 1/2 hours checking frequently and stir the vedgies on the sides so they dont scorch and dry up. Drain any extra butter as needed. When a knife inserted into the middle has juices running clear (no pink or red) top loaf with the shredded cheese and turn temp up to 400 for another 1/2 hour - 45 minutes. Check loaf by slicing down the middle. Meat will be gray with no pink when down.

This is a great way to sneak vedgies into a meal so kids will eat them.

You can alter the "surprise" ingredients too! Things we've tried are: chili, mashed potatoes, cheese, macaroni and cheese (very yummy!) Have fun and experiment!
