The young ones don't understand that the nest boxes are for nesting yet. When they come into lay, they will.
I would either exclude them for now, but if that isn't possible then either put a lip around so they can't chuck it out, or use mats. Even old towels will do if you don't want to buy...
Are you letting them out to free range together or in an enclosed run?
If in a run, ensure plenty of escape routes to different roosts, things they can hide behind or jump up onto, so that either he or they can have refuge from being chased and caught.

Yes they are pure Wyandottes. The pullet is a White Partridge I believe (rather unusual colour), and the cockerel is a mix of Silver and Gold Pencilled (one parent of each).
I think NatJ is right. The most likely explanation for a chicken that doesn't exactly match any particular breed criteria, is that they are a mix of different breeds.
