The easiest way to simplify is with shapes. Break everything down into a shape, [roughly] measure the proportions (everything lines up with something!), then add the details after.
I recommend practicing this lesson and the others on the site, because the lessons can be applied to anything...

And, don't worry about making art that doesn't look exactly like the reference! If people wanted to see that, they could just look at a photograph; the interpretation is what makes it art. π
