I making two so I can eat one all by myslef today and tomorrow and brining the other one to the TDay dinner.
I just finished a sweet potato and a pumpkin one to bring too.

I saw it on the cover of a magazine while standing in line at the grocery store the other day. I'm too cheap to buy a magazine so I'm glad I found it online.

Do I really have to weigh down the crusts and bake for a few minutes first or can I possible skip this step?

You can throw the first 4 ingredients under in the over under the broiler for a few mins and then straight into the blender with just a tad bit of water too.
That is how I make it. (With a couple serranos though;))
