Shredded beef enchilada's, I pressure cooked a chuck roast yesterday with cumin, garlic, chipotle peppers in adobo , S &P and beef stock. Tonight, I just have to assemble and dinner is DONE!!

It's a Weck canning jar, I found them at Crate and Barrel. They were $3 or $4. I have 2 sizes, I've had them for over 5yrs.

I waitressed at a very popular pizza joint to put myself through Nursing school in the early 1990's, we got to eat the mistakes, I grew to LOVE black olives on my pizza! It's surprising what you'll try when you're poor and hungry.
