I’m planning to bring out the dough from bulk ferment in a few hours, and baking later tonight. Good thing it’s cooling down well in the evenings!
Have you found this to dry out the crumb? I’ve found this to only work if I eat the whole loaf in one sitting 🤣

I don't have a name for him unfortunately, I got him about 6-7 years ago from carl's Oregon trail sourdough starter project.
My original homemade starter was named Mjolnir, but the bread it made didn't taste...

I remember the days when I didn't used to have a hand mixer, I used to hand whisk all my egg whites and heavy cream! That mad for some very dead arms, lol.

3.5 lbs of flour in this one. Thinking of upping it to 5lbs and doing a 6 loaf bake next. Maybe even revive my starter and make sourdough loaves... lol!
But 50lbs? 🤣 It’s the cheap bleached costco flour too. *cries*
I have a home mill and ended grinding some wheat berries to add to the over-processed nutritionally deficient flour so that I can make myself feel healthier, lol.

I was cleaning the downstairs pantry this week and discovered a 50LB BAG OF FLOUR my mom bought last year during covid boredom.
I see lots of baking and bread gifting in the weeks to come :he
cinnamon raisin and honey oat loaf....
Made some vietnamese bread rolls today. Ended up a bit darker than I would have liked, but the crumb is nice, and sooooo fluffy :)
based loosely on this recipe, without the bread improver or vit C.
I have the same starter too! In fact, I used it to kick start my fermented feed!
I really don't do the starter enough justice though, it sleeps in the fridge for months at a time - but always wakes up again without an issue...
