I can't really answer your question because I have no experience with Sasso broilers, but I can tell you that most of the home raised birds I've eaten are "drier," (though not "stringy,") than store bought chicken, with the exception of a few very well spoiled pet birds. I think this may be why...

Yeah, my Elvira passed just recently. It had been wet and the neighbors goats and chickens spread cocci. Mine were even on medicated feed when they caught it. I feel like I failed her. :(

The guy was fired, and that rooster passed away a couple months later. I ended up with four out of six birds being roos after him, and still have two. One is currently raising chicks with his harem, and he has no issues with me getting into the run or coop, scooping up chicks, etc.
I have avoided Cornish X because I have read they are very likely to die of shock due to heart problems from their rapid weight gain. I'm sorry that's all that's available to you and that I don't have any more information for you.
I don't know the specifics on RIRs, but I've had five roosters and none of them were a holes, and one was only ever aggressive towards people in red cars after the bug guy kicked him and sprayed him with a pesticide. :(

Chick #6 hatched today, and cut its own neck/face with a foot claw while still partially inside the egg. The wound isn't bloody, but the chick is more lethargic than the others. It did manage to get out of its shell, but I don't have high hopes for it and it seems neither does Lovey.
