I just change it once a week. I have a 15 or so gallon waterer that I keep about 10 gallons of water in (so I can move it easily) and it doesn’t really get dirty. I just think it is a good habit to change it even if it isn’t dirty so it seemed like a good interval which has been working good so far
To me, the light gray and white one looks to be for sure a rooster. The one with a gold head and gray body also looks like it most likely is a rooster as well.

I am a big fan of jersey giants and Brahmas. They are friendly, decent layers, and fun to hang out with. They are also pretty big so they are a bit less likely to get attacked by predators.
Would you mind sharing the coop? A lot of the premade coops are flimsy and a strong storm or a predator could possibly break it causing your cat to escape or be injured.
While it is pretty red, it is also a really small comb. Could you get a side profile?
