    The only way I've been able to grow spinach is in potting mix in a half barrel. I think it just does not like my soil. I grew it through winter a couple times and it started bolting soon after it was mature. Maybe it was the variety?

    I like it cooked but didn't care for it in salad. The chickens go crazy for it. I think it can take more heat than lots of other greens. It didn't bolt as fast as spinach as spring warmed up.

    They will ripen on the plant if your season is long enough. The technique you mention is used by those with a shorter season. It still needs full size bunches to work. Commercial bananas are often picked green to ship to stores. They ripen on the shelf.
