The only problem I’d have with plastic containers is that you can’t boil them at a high enough temperature to kill off any bacteria that may live in the containers. The heat you need to kill some of those bacteria would most likely melt the containers.
Just make sure you watch out for botulism. It is a tasteless, odourless, bacteria that can be fatal if not treated. It can be caused by canned food not having enough acid. It is more common in canned in vegetables that don’t have enough acid by themselves. It is rare to get botulism poisoning...
