Oh-no! Sorry to hear that. I've had those 'disappearing plant parts' moments. Inspect the ground around your plants. See any piles of poo? Could be a hornworm. And, could be a rabbit; that's what happened to one of mine years ago.
Oh yes, I love Mimosa trees, to. Sadly that one got cut down 'cause it was too close to the house. She has another one, but something keeps eating it, stupid animals.

I've had a ton of these this year! I have to be careful where I walk, because I've been very close to stepping on some. A lot of them have probably been clobbered by the lawn mower. I try to move them either in the woods, or in my garden when I find one.
No, it's not a horsefly, but a robber fly. They are non-aggressive and are quick to fly away from you. I was lucky to get that close to one to get his picture.
