baby chicks hatched without issues, they fluffed out and are now under brooder plate. What are some dos and donts? got them food and water. and how do you sex them?

Unless they are an autosexing breed or cross, the other way is to vent sex them. Unless you have experience -- and I assume you don't, since you asked -- you can severely injure or kill a chick by attempting to do it.

You will probably have to wait until they are several weeks old to find out their sex.

Males and females develop their combs and wattles at different rates; the boys' grow earlier, bigger, and more red. Cockerels also get some sex-specific feathers in their hackles and sickles (feathers around their necks and in front of their tails).

The combs and wattles are earlier than the feathers, usually.

Cockerels can start to crow around 6-8 weeks old, or even sooner. Pullets can crow, but that's fairly rare. The "for sure it's a girl" test is when they lay eggs. That can be as early 18-19 weeks, or up to 6-8 months, depending on what time of year they hatch and their breed.

Post some pictures when they're around 8 weeks old, and we may be able to tell.
