I’m butchering quail for he first time today. I was wondering if you put them right in the freezer or let them sit on ice for a few days like ducks and chickens. Help appreciated, thanks!

sorry for the late reply....you should let them rest 24-48 hours in the fridge before freezing. (i usually try to split the difference at 36 hours especially with young quail). brining is optional, but I now prefer to brine before freezing or cooking.
