Butternut Squash

Does anyone have any recipes for butternut squash? I am the recipient of a couple of beautiful butternuts but have never cooked with them before. Thanks for any input and ideas!
 
ok hardest part peeling them ok so peel them take out the center seeds and stuff cut into 1 inch cubes boil them till tender drain them put them in a pan mash them add salt pepper and butter then some brown suger yummy thats what i do every thanksgiving everybody love my squash just season it to your taste
 
It's easy enough to find recipes for this delicious squash on the internet. But the way I enjoy it the most is to cut it in half, clean out the seeds and slather butter all over it really thick, then sprinkle about 1/3 inch of brown sugar over that. Pop it in the oven for about 45 minutes and then nahm nahm nahm~!~ Scoop out the yummeh goodness.

Poke a slit in the squash, set it on a piece of aluminum foil in a 350° oven and roast it until it is tender, 45 to 60 minutes depending on its size and how long it has been stored. Then it is easy to scoop the squash away from the shell to use as you want or to eat. Butter, cinnamon and some brown sugar...yum!

Here is one I created awhile back, there are NEVER leftovers.
Katy's Butternut Casserole

Seed, peel and cube your squash
Toss with enough Virgin (not light) Olive Oil to coat very well.
add chopped FRESH Rosemary, Thyme & Basil (use a lot of Basil, standard amount of others)
also crumbled Sweet Italian Sausage
Season with Jane's crazy mixed up Salt

Put in sprayed casserole dish and cover with foil. Bake at 350 until squash is tender (30-60 minutes depending on how small you cube your squash.)

redneckrick is right - peeling them is the hardest part but worth the trouble.
And with a good sharp peeler not so much work anyhow.

I cut the peeled squash into cubes - about 1" - and roast on a cookie sheet with cutup onions (red ones are sweeter), sprinkled with olive oil, sea salt and some balsamic vinegar.
Just roast at 375 until the squash & onions have browned edges and are tender.

Serve warm, room temp or chilled
Yum : 9

A Turkish friend gave me this recipe:
Cut squash into cubes and put in a saucepan, add 1 cup sugar and enough water to just cover the cubes.
Bring to a boil, then lower to simmer and simmer until tender.
Let cool in the syrup and serve with whipped cream or vanilla ice cream.
Sounds crazy but turns out great.
(think: pumpkin pie)
