Chicken recipes, using brine?

Dose anyone have some awesome chicken recipes that use brine . I want to blow my wife out of her seat with a dish I can make her for mothers day. I'm using some of my first time processed heritage breed rooster culls. I love to cook, and I'm capable in the kitchen. I'm looking for something really special . Thanks any ideas
 
We make this brine for chickens and turkey. Cut the measurements in half for a single chicken.

Poultry Brine

3/4 cup coarse kosher salt (or 1/2 c table salt without iodine)
3/4 cup sugar
1 cup boiling water
3 1/2 quarts (14 cups) cold water
1 pint (2 cups) dry white wine - Riesling, Chardonnay, or Sauvignon Blanc
1 tablespoon pepper
Several sprigs of thyme, rosemary and/or sage - optional (use your favorite herbs)

You can also leave out the wine and up the water to 1 gallon

this is one of my favorite brines. I use it for alot of chicken recipes like BBQ chicken, fried chicken.

this is the brine:

Brine:
1 cup of water
1/2 cup of kosher salt
1/4 cup brown sugar
2 bay leaves
2 TB peppercorns
4 garlic cloves crushed
3 lemons cut in half (will squeeze juice into and leave lemons skins in brine)
1/4 teaspoon red pepper flakes
5 sprigs of fresh thyme

BUT this is my absolute favorite chicken recipe. In it you use a salt "brine" and let the chicken sit in fridge for a couple days and it is sooo good and the skin gets crispy...the absolute BEST way to roast chicken and the bread salad that goes with it is amazing.
