I am sure everyone else has already figured this out long ago, but it is new to me so I thought someone else out there might want to try it too.
Super Easy!!
3-4 chicken breast in crock pot and pour in a jar of salsa (any kind). Cook 4 or so hours until the chicken is easily shredded. Serve on soft taco shells with refried beans, Spanish rice, cheese... you know whatever you like on a taco. It is so easy and very good!!

Nope, hadn't figured this one out yet. I cooked chicken breasts in the crock pot this afternoon, made chicken tortilla soup with half of them, and saved the others for ?????. Now you've answered my question as to what I am going to find to do with the leftover chicken. Thanks!

I make that all the time and it's awesome. I use rotel and a package of taco seasoning. Then left overs are great for enchiladas. Just freeze till you are ready to use it.
