Cleaning a chicken

Man. I’ve seen a lot of different ways to clean birds, but
That one
Is new to me 😬
I personally would not go that way.
I imagine that it would be highly likely to cause significant bruising to the meat ...

If you don’t want to use all possible parts/ don’t want to pluck, I wouldn’t
(To be frank)
Tear it apart.
You can just open the belly skin, near the tail, and slit up to just below the crop, without puncturing the abdominal cavity- peel the skin away from the breasts and thighs, and fillet off those larger pieces if that is all you want.

Or, you can “clean” them, rinse and then skin them, and you will have more options for bone in thighs/ breasts, or, removing the larger pieces and having the “frame” w some residual meat to toss into a soup pot for a meal, or excellent broth w a few seasonings.

We don’t process our own birds that way, we pluck, keep the skin on whether roasting the whole bird or cutting it up.

We do occasionally process smaller ducks and quail (from hunting trips) without plucking. Depends on the bird and the desired cooking method.

Processing day is no ones favorite day. But. Everyone loves to smell it in the bbq/ smoker! oven!

I've tried that once but Ι ended up vomiting, unable to finish my task.
Thus the cleaning i've mentioned on the first post, would be ideal, despite throwing away a significant portion of the meat.
