I am 99.9% sure you don't need water in winter, but I thought I'd ask anyway. :)

Also, what preperations would I need to take for winter?

You absolutely need water in the winter, and ducks will swim during the winter even if it 10 degrees out they'll play in the water and drink it. If you get a lot of snow make sure to stock up on extra food and bedding before storms and check water 1-2 times a day and give fresh water everyday if not each time you check it because it will freeze. That's about all I do for winter personally.

Ducks do not need to swim....On warmer winter days I will fill my kiddie pool next to the house so they can swim and then dump it out.....For the most part they only get their rubber stock bowl to drink and clean up in.....Lots of trips I make with pails of water daily....
I put straw down in the run and in the Duck houses...I wrap vapour barrier around my run as a wind break....I feed more greens and veggies in the winter....I run heat once the temps get bellow -25C, not enough to cook my Ducks but to cut the chill....
Alberta winters can be harsh....

I guess I spoiled my ducks. We have a 55 gallon black hard plastic tub submerged in the ground. I got a heater from Tractor Supply and they had a swimming hole all winter. Was not a crazy winter here in NY so I actually got to clean it out almost once a week. They loved it.

So how cold is too cold for them to swim in? I have 4 pekins and I'm trying to plan ahead. Their coop that they sleep in is not very big, so they usually need a good bath in the mornings. I wanted to leave a pool out during the winter but I also don't want to freeze my duckies! It's NC though so it's not likely to get too awfully cold. Usually stays above 20-30degrees at the coldest.

You definitely need water for ducks in winter.
What I do is fill them in the afternoon, and in the morning after theyve frozen overnight is kick a hole in the ice for them to drink out of. Then in the afternoon they get swim time to bath and stuff (generally in the afternoon here is over freezing point) and repeat ;)

If it snows more than an inch, I plow a space for them to walk in. And lots of shavings in the house ;)
