Duck Stir fry.... YUM!!!

On OregonBlues suggesting, I tried cutting up all the meat off of a fairly small swede duck I had to skin due to pin feathers and stir fried him in ginger, soy sauce and onion, then added a bag of frozen asian veggies, a couple sliced up sweet peppers and some teriyaki, then served it on a bed of brown rice.


YUM! is all I can say. I slipped it in there, fed 8 people on one small duck and even the relatives who don't care for duck raved on my "beef stir fry".

It pays to think outside the "roast duck" box.

I would love to try duck meat, never have. Is it similar to the dark meat on chickens and turkey's, which I LOVE!! Actually, Duck is on sale right now at a local grocery store, and its tempting. Cook it exactly like chicken? Kind of 'chicken' to try it actually, lol.
 
Duck meat tastes like thigh meat on a turkey. As I recall store bought pekin... It was a bit blander. I guess a similar difference in taste between store bought chicken and farm raised heritage accounts for that.

Don't get me wrong, store bought pekin with the orange sauce it comes with is delish too! Certainly worth a try.

I think my favorite duck is still chinese crispy style I had in a restaurant way back when. Wish I could try it again to figure out how to make it. >_<
 
Duck isn't cooked exactly like chicken. I think chicken is nasty if it is not fully cooked. Duck on the other hand is premium when it is still pink. Perhaps about the same color as medium cooked steak.

With duck, you want the skin dried completely, poke a bunch of holes in the skin, without going into the meat. I like to roast it breast side down. I put some herbs, onion, and maybe a quartered apple inside the cavity.

Store bought duck is not nearly as good as home raised duck. But at least you get to try some duck before you get invested in raising some.

Besides liking the meat, I just like having ducks around. I also really like the duck eggs.
 
I had a few ducks around once, but couldn't quite talk myself into killing them. They just disappeared one day, when over summering at my folks pond! Think a coon or coyote got them, makes me so mad.. they had been going there for 3 years in a row! I did like their eggs, when they were here. Tough buggers to crack tho. I liked using them in cakes!
