egg recipes for people who don't like eggs? :)

I love my chickens but I'm not such a fan of eggs. I do feel as though I should actually eat the eggs we are getting though..what are some good recipes/dishes that use a lot of eggs but aren't necessarily 'eggy'. (no omelets, quiche, scrambled eggs, fritatas, etc)

I like hardboiled eggs but I find fresh eggs completely impossible to peel when hardboiled.
 
Thanks! I should have specified 'non dessert' recipes :) Eggs are easy enough to use in pies, etc. I need main dishes. I might be out of luck!

I have been reading the many threads about hard boiling fresh eggs so I have renewed hope that I can learn how to hardboil my fresh eggs. My daughter will eat hard boiled egg whites for breakfast.

My chickens are mainly pets, the eggs are a 'bonus' that I don't really know what to do with!
 
Have you tried making Lemon curd for putting on scones? Not quite a dessert I guess.
Hollandaise sauce also uses up eggs.
You can also make homemade mayonaise with eggs.

We make a sandwich spread by grinding 1 pound beef bologne, 6 hardboiled eggs, and about 1 1/2 cups of dill pickles. Then you mix in mayonaise to bind it all together. It is really good on just plain ole white bread. My mom freezes it in small containers for use later as it is just her and my dad at home now and it makes a bunch!
 
I'm always looking for a non "eggy" main dish recipe. Someone posted a "smokey egg dip" recipe on the Okie thread it is really good I'll try and find it and post it here.





Here it is, this isn't my recipe it is the BYCer jcatblum.

Smokey Egg Dip

12 Eggs- hard boiled finely chopped
2 T Soft Butter
2 ½ tsp- Liquid Smoke
1T Lemon Juice
2t Mustard
1T Worchester Suace
2 drops Tabasco
1 ½ t salt
1t Dried Minced Onion
¼ t Pepper
¾ C Mayo
Combine all ingredients, blend until smooth. Refrigerate 4 hours. Serve cold or room temp. We eat this with crackers, carrots, broccoli, or like Egg Salad.
My husband says it is addicting. My girls & my sisters kids even love this. It is YUMMY!!!!

Thanks for the ideas! I just perfectly boiled 8 fresh eggs...they peeled perfectly and were cooked perfectly...yay! There are only two left...so the recipes will have to wait.
 
Spaghetti Carbonara will fit the bill. There are many versions that can found but all of them simple. It uses bacon(pork or turkey) or pancetta, 3 eggs,cream, olive oil and Parmesan cheese to make an egg sauce. Very light egg flavor and a favorite here at the picky house. my son that won't eat eggs loves this even though it has eggs. Not to say that my kids are picky, but there are very few meals that everyone is on board.

Oh yes, I had completely forgotten about ham and egg spaghetti. My Gma made it for us all the time as kids, we called it invisible sauce spaghetti. She didn't make hers creamy at all.

She would saute ham (and a little bacon if you have it handy) and garlic in olive oil, then mix 3 eggs asiago (or parmasian) cheese, basil, garlic powder, tiny bit of cinniman. After the ham and garlic are slightly browned she would put the cooked spaghetti noodles in the hot pan w/ the oil and toss, then add the seasoned egg mixture and toss until the egg was cooked, serve w/ asiago cheese on top.

I have never found anyone who did not like this dish, even my MIL who did not like anything I cooked except this and popovers.
 
So far we have been doing great eating all of the whites, and probably half of the yolks, and feeding the remaining (cooked) yolks (and shells) to our finches and back to the chickens. It is working out well. I plan to make spaghetti carbonara sometime though! It looks good.

I don't think food banks and homeless shelters here would take eggs from us.
