Guinea Eggs

Thanks ! They are about 6 months old. We have 9 and are getting about 3 eggs a day so I'm not sure who or how many are laying...
 
Mine are also about 6 mths but not laying yet. I have 11.

Edit to add: I intend to treat mine like chicken eggs and if I am no sure if they are fresh I will do a float test.
 
I have found no difference in the taste of guinea eggs. They may be a richer yellow and it does take 2 of them to equal a large chicken egg. We always eat the guinea eggs if they are fresh. In cool weather they will stay fresh for a week or longer but in the summer I want them to be no more than 2 days old unless I have refrigerated them.
Treat guinea eggs the same way you would a chicken egg! ;)

We enjoy eating our eggs and just sub them in for regular chicken eggs. They work beautifully in baked goods and the cakes seem to come out even fluffier.

The shells are a bit of a difficult to crack in a conventional way, so I usually hold the egg in one hand and give it a good quick whack with a knife to get it to crack. A table knife would work since you don't use a sharp edge, just the blunt side will cause an opening similar to cracking a chicken egg on the edge of a counter.

Have fun with them! They sure are pretty eggs.

It's a bit early here for mine to be laying, but I should have a bunch of them in a few months.
