Does anyone have a secret for hard boiling duck eggs? After I boil mine, they seem to have a layer of white that stays with the shell and I just can't get much white out of the egg. Is there an age old secret to get the shells off easily without taking some of the egg along with? Are they different than boiling a chicken egg? Please give me all your secrets. Thanks!

I prefer my duck eggs fried or scrambled, would rather have them than chicken eggs any day. I don't care for them as much boiled, they seem kind of rubbery that way.

I tried boiling duck eggs once...I r were not a happy person!

the white that didn't stick to the shell and fall apart trying to get it unstuck, crumbled and fell apart when I poked it, and the yolk was like darned play-dow(sp?)

that, and I didn't think it tasted very good

I've noticed the same thing when I hard boil my duck eggs. The whites seem to have distinct layers, with the outer layer stubbornly sticking to the shell. I have used the super-fabulous method of lowering the egg into already boiling water and then cooling the eggs quickly as they come out of the pot, which works like a charm with chicken eggs, but only about half as well for duck eggs. I'm wondering if it is just the nature of the duck eggs?

I haven't experienced duck eggs yet but I always have good luck when peeling my chicken eggs. After they are finished boiling, I drain them, then add cold water to the pot and peel them in the water, moving them around a little to wash the smaller pieces of shell off. If I only have two or three eggs, then I will just peel them under running water. Also, I've found that when you crack the egg, do it all over. Once you have made the initial crack take your thumb and press all over the rest of the shell and it will crack, but don't press to hard bc you'll bust the egg out. Then start peeling, there is a thin layer of film that keeps the shell together, once you peel that, the shell should come off all together. Good luck!

HEY! I just found an old duck egg that had rolled to the back of my frig. I decided to boil it to see how an older egg would boil. BINGO! This one peeled perfectly!! I'm thinking the older egg trick might be the key. Thanks all for your comments.
