How do I tendorize tough meat?

Hey so I have(had) a two year old Rooster who has been free range his whole life, ready for the pot. I am hoping someone can tell me the best way to tenderize his meat and cook him (i'm assuming in a slow cooker).. I tried cooking one of our hens and it came out so tough you could hardly eat it.
 
long and slow . 200F in a covered pot in the oven..

crock pot for a long time.

pressure cooker..

soup.

not much you can do to it before cooking it to tenderize it..

first older birds are good for one thing stew the slower you cook the more tender
meat tenderizer will help very little... We have a great little thread on home bakers here join us anytime
