Like most things, the answer is - it depends. It depends on whether you can find someone that wants or needs him. It's possible that someone has hens of the same breed and lost their roo (or never had one). They might be willing to pay a lot for him. But that is not a high-probability case, it's more likely you will find someone that wants a pretty roo that will help protect their flock of other breed hens and be a pet or just nice to look at. They could use any of a number of breeds to meet that goal, so your roo is not a scarce commodity, but still has value beyond being eaten. If, and this happens a lot, there is a surplus of nice roos and no one wants him except as food, you will need to decide if you can keep him or if you must dispose of him, even if his fate is not what you hoped.
