I bought a Black Giant chick and an Easter Egger chick a few weeks ago. My first pair, Dominque and RIR, were very calm in the brooder and didn’t make much noise but these two play fight (?) all the time, try to escape the brooder, the Easter Egger even managed to turn their feed bowl over and get stuck underneath (which was kind of cute and she got herself out). Is it just their personalities? Like are their breeds know to be crackheads?

Too young to tell right now. Just have to wait and see.
It could be their personalities.
I have a Silver Duck Wing OEGB bantam cockerel who has been hyper and feisty from the day I got him.
But also have a BBR OEGB bantam cockerel who is calm and sweet and has been since I got him.

How big is the brooder and what is there in the brooder for them to interact with? They could simply be bored, especially since it's just 2 of them.
Good size and since they reached this size I’ve been taking them outside so they get used to the transition before it’s needed. I watch over them as my two older girls are near adult size/basically adult I think and I’m slowly introducing them

I also talk to them and handle them to get them used to people

My EE bantams were - and remain - flighty basket cases. They're not aggressive, but everything sets them off. We don't even THINK of laying hands on them until they roost, and even then we often get some serious fussing. The BJG chicks were sweet, but definitely not the brightest crayons in the box (or the brooder.) They wouldn't start anything, but when the smaller chicks (EVERY chick is smaller than a BJG) got wired, they followed suit - and with EE bantams, "wired" was a frequent state - things got kinda crazy!
