Laying eggs in the evening??

Not sure what is happening with my birds but it's very confusing.
A few days ago, I started keeping my birds locked up until around an hour before dusk as we've had hawk issues so I wanted to ensure that I was out there watching them.
However, I've noticed a few of the hens have been laying their eggs while free ranging in the evening.

I change the bedding in the nesting boxes everyday to keep them nice and clean for them. And like I said, I keep them locked up all day until an hour before dusk so they should be laying in the nesting boxes like the others are.

The hens range 1-8 years old.
Our 8 yr old hen still lays even though it's been just somewhere on the ground in the coop. Her laying isn't the issue though.

I'll be keeping them locked up completely starting tomorrow.

Any reason they would be doing this?
