Quick question here:

I have some hens going through the molt, I know they need more protein. Will adding artificial light in the coop decrease the protein need and help get them through the molt faster? OR, will adding a light increase the protein needs and make them need even more?

Insight on this would be appreciated.
 
They aren't necessarily related in the way you imply. The need for protein/essential amino acids is due to re-growing feathers regardless of light.
Molt is a result of decreasing day length.
Adding artificial light won't affect how long it takes to grow feathers.
After molt, slowly increasing day length may kick start a resumption of laying however - and sooner than if you wait for after winter solstice
