We are overrun with squash right now. I was telling my Grandma that I need some new squash recipes to mix thing up a little, and she gave me this wonderful recipe that she got from a little old lady who lives in a cabin that is like going back in time (no tv, no electric stove, no washing machine... etc.)
Mrs. Ezzell's Squash Pie
1 1/2 cups sugar
1/2 stick butter (or margarine)
3 eggs, beaten
1 cup boiled squash
1 tsp vanilla
3 Tsp milk
Dash salt
Regular prepared pie shell
Mix all ingredients with mixer, adding eggs last. Bake at 350 degrees for 45 minutes, or until golden brown.
Let cool for 5-10 minutes and then serve warm. Can also be refridgerated and eaten cold on a hot day.
