My Araucana's are only a year old and have stopped laying their bluish/greenish eggs. What would be causing this?

What are you currently feeding? Have they got constant access to water? Any recent stressors (new noises, attempted or successful attack, change to the flock, etc.... remember what is stressful to them can seem insignificant to you)? What has your weather been? Are they a year old our closer to 18 months?

Egg shell color doesn't change...
Ah, but it does - to a point, and often enough that a keeper believes once brown (or blue) eggs are now white) -- blue, for example, is the result of bile mixed in to the shell-resulting in the entire shell being blue throughout (vs. the brown overlay of pigment that results in brown on the outside/white on the inside). As each laying cycle progresses the shade of coloring can fade and become very light in some birds. If a bird has a malfunction in the production/storage of bile (or an error in the "paint booth" for brown layers) you could see a drastic enough change in the shade of the eggs to cause you to believe a bird has stopped laying or has begun laying a different color of egg.

You can't properly answer a person's question if you don't understand what the question actually is - which is why I asked OP to clarify.....at which point the above can be explained or reasons for production stoppage can be explored.

Yes, all true, but the shell color itself still never changes. Good post!

It’s because I was going to ask this question. I have two Americana chickens. Same flock. 2 years old. About 6 months ago one of them stopped laying blue eggs. It’s pale in color now. No food change and no stressors.

The blue shell color go pale due to the vital nutrient that creates bilirubin.
Not sure those are the correct terms....but yes, blue shells can fade.
