My freshly butchered chickens have yellow spots on them

We butchered our 8 roosters two days ago. I took a picture of them in the cooler about an hour later and someone asked me what the yellow spots are on them. I have no idea and thought someone might be able to help me.

Any help would be appreciated. This is my first time butchering a chicken and I don't know what the spots are and if they are normal and if the chicken is safe to eat/freeze.

Welcome to BYC. It looks normal to me. I don't butcher my chickens, but the ones that come from the store, such as Tysons sometimes have that. I would say that Gita is right about it being fat under the skin.

Looks normal to me. Does it rub off? I've noticed that scalding brings up the outer layer of skin that would soon shed (think chicken dander/dust) into a sort of membrane. Most of it rubs off in the chicken plucker but any spot with uneven scalding tends to remain. That's why its most prevalent on the legs. I would say they were held by the feet while scalding.

BTW, I see they still have their tails. Did you cut out the oil gland?
