NEED Amazing Key Lime Pie recipe! please! :)

DBF's b-day is on sunday so were having both our familys over our house(to meet for the first time!) for a double-mothers-day/ birthday BBQ!

I've been beating around the bush when it comes to dessert! He said Key Lime Pie or Coconut Cream Pie. Well my respnse was "Babe, I really dont know how to make a pie!" ( I DONT!! I dont like pie, so I've never made one!) so he said carrot cake("don't know how to make that either!!" haha

) So i'm gonna suprise him with PIE!! I can pretty much make anything so im NOT intimidated, just dont know what a good key lime pie consists of!

I've looked it up and found some recipes, but some were mirange topping(sp?) and some had a sour cream/powdered sugar mixture! Just great, I'm from California and dont even know what REAL key lime pie tastes like!! I'm also gonna make a MissPrissy's Pecan Pie so if I do mess one up I'll hopefully have an edible back-up!!

NEED AN AMAZING RECIPE PLEEEEAAAAAASSSSSEEEEE!!!!

This is not key lime but it is one that people practically stand and lick the empty pie plate.

Mississippi Mud Pie

Ingredients

1 Cup Powdered Sugar
1 cup Semisweet Chocolate Morsels
1/4-cup margarine, cut up
1/4-Cup Whipping Cream
2 tbs. light corn syrup
1 tsp. vanilla extract
3/4 cup chopped pecans
2 pints coffee ice cream, divided
Prepared chocolate crumb crust

Preparation

Combine sugar, chocolate morsels, margarine, cream, & syrup in a small pan. Cook over low heat, stirring constantly, until smooth. Stir in Vanilla & cool.

Put 1/3 of this sauce in the bottom of the crust. Sprinkle with 1/3 of nuts. Put 1 pint of ice cream over the nuts. Freeze for 10 minutes. Repeat layer.

Top with last 1/3 of sauce & nuts. Freeze for at least 1 hour or until ready to serve

This is a killer crust that you can't mess up.

QUICK AMISH PIE CRUST

2 cups all-purpose flour
1 1/4 teaspoons salt
2 teaspoons sugar
2/3 cup vegetable oil
3 tablespoons milk

Mix flour, salt, and sugar in a bowl. With a fork whip together oil and milk; pour over flour mixture.

Mix with fork until dampened; turn into pie plate and press dough evenly against bottom and sides. Crimp edges if desired.

To pre-bake: Prick; bake 425 about 15 min.
 
Key Lime Pie is so EASY to make and makes such a big impression on your guests! The big trick is to find the bottled Key Lime juice, which I guess isn't available in all parts of the country. I can get an inexpensive brand called Mrs Biddle's in our local Publix grocery store and it does great. The recipe on the side of the bottle says:

1 14oz can sweetened condensed milk
4 egg yolks
3 or 4 oz juice (I always use 4 oz)

Mix milk & egg yolks at low speed. Slowly add juice, mixing until well blended. Pour into 9" graham cracker pie shell and bake for 20 minutes at 350 degrees. Refrigerate several hours before serving to allow filling to firm. Top with whipped cream or meringue and ENJOY!

I make my own graham cracker crust by grinding graham crackers in the blender & mixing with butter & sugar. The recipe is usually on the side of the cookie box. Or you can buy a prepared crust. And I top my pies with real whipped cream I make by whipping a pint of heavy cream in the mixer with a little sugar & vanilla, but you could use canned or packaged topping.

And I use duck egg yolks which give the pie a rich golden color, but of course you can use your own beautiful chickens' eggs.

I like to freeze narrow slices of Key Lime Pie for special treats during the weeks to come.

and I cook alot and have MANYY amazing ones of my own!(I'm working on a cookbook, but its a side project and is slow going!)

ooh like my pasta salad im making tomarrow! It has bacon, chicken, cheese, red onion, HB eggs, maybe some pickels and i'll put a little pasta in there, somewhere!! But the 'sauce' is what really gets ya! (mayo, mustard, rice vinegar, sugar, and salt) mmm! Its always requested!

LOL from key lime pie to pasta salad!

I made the key lime pie over the weekend! I think it turned out really well. I made my own crust and added coconut to it.

Here's what I made:

Key Lime Pie

8 graham crackers crushed
1/4 C. butter, melted
1 1/2 Tbls sugar
1/4-1/2 C. sweetened coconut

1/2 C(+) key lime juice
14 oz. can sweetened condensed milk
4 egg yolks

Mix crust ingrediants and press in 9" pie pan. Bake at 350° for 7 mins until lightly browned. Mix yolks and condensed milk, slowly beat in lime juice. Pour into crust and bake at 350° for 12 mins. Let cool then refridgerate overnight. Serve with whipped cream.
