Need help please 🥺

I am incubating for the first time and I am in over my head. I collected a few eggs from a few different hens... I collected several eggs and held on to them for a couple days we put them in the Incubator candeled for the first time yesterday and my heart dropped into my stomach when I saw an eye and what appeared to be feet moving inside of an egg they would have only been incubating for 7 days 😭 so I do have another one that looks like it's right on time but I have major concerns about hatching time obviously this egg was getting incubated by the hen and I didn't know that there was an egg there? so now I have no idea how far along this poor chick is in comparison to the other so I won't know when to do the humidity raise? Is there any telltale signs to help me figure out how far along this chick is incubation that someone can recommend... I know sometimes you just have to learn as you go but I don't want it that chick to pay the price for it I'm in utter shock I retrieved that particular egg on February 8th and we started incubation on the 10th. The other one was dated February 9th and it looks more like it should. So the one that stayed in February 8th I'm guessing was incubated my mom and somehow survived without heat for the day of collection to incubation?
 
If the chick is young enough the embryo can essentially "freeze", and the chick can survive for a little while without heat. But this chick sounds quite a bit older than that so I don't think that is the case.
If it did that from the time I took it from The Coop until we put it in the incubator it would have been two days I need to figure out how far along this thing is because I don't know how to do this humidity... I don't know I've been looking at pictures on Google and here I have a picture of the one that is clearly younger I'm going to take a picture of the one I'm really concerned about hopefully I can get a good picture tonight. Does this one in the picture look like a normal 7-Day incubation?
