O Shamo Diet and Nutrition - Specifics?

Hi everyone. I will be getting my first and only O Shamo very soon. A young roo/stag, about 10-12 weeks old. I want to make absolutely certain I do all the right things with him. Proper, balanced, high quality diet of the right amount of what he needs is critical in my opinion. Thus, I am seeking the O Shamo experts on here for their advice that have some solid experience with O Shamos. Here are my initial questions:

1. What amount of protein at this particular age is correct (14%-18%?), and at what age do I need to alter it up or down and/or under what conditions (e.g. molt)?
2. Can someone give me brand names of food that I can buy? I need to purchase some food for him which will be his stable diet, aside from added treats now and then.
3. Can someone give me the name and number of an O Shamo expert that I can speak with personally? I am so very serious about proper care I can't even find words for it.

I'm brand new here so please excuse any mistakes, I apologize. I'm not 100% sure where to post anything, but this looks like a start? PLEASE feel free to direct me elsewhere if more appropriate. I am madly in love with my little shamo roo and I will do whatever it takes to ensure top quality care in all aspects for his overall health, well-being, happiness and all else for him, I truly mean that!

The long legged breeds can get a nutritional condition where they grow too fast and they will "go down". I'm not a shamo breeder, but seem to recall people shooting for a little lower protein once they are feathered out a little. Probably the best person to ask would be the person you are getting your bird from. The OG thread comes and goes. There are knowledgeable people there, but if they don't check in for a while your post could get buried in pages of show and tell pictures.
 
Thanks for your response! Yes, I am aware that the slow growing larger gamefowl require a lower protein content to help prevent leg problems and keep muscle/bone growth properly balanced. I am just wanting more detailed specifics on protein percentage, no less/more than specific min-max range, and I'm also wanting to know when to switch them to higher or lower protein or other nutrients based on stage of growth or other circumstances such as molting. I have, of course, spoken to whom I'm getting my roo from, this person doesn't seem to think regular protein content is much of a problem for the shamos at that facility. So, I am just wanting to seek others' opinions. And because I believe top quality nutrition is vital, I would respectfully like to speak to someone experienced with O Shamos and get their expert advice. Diet/nutrition is probably very similar or identical to other large oriental gamefowl like Malay or Aseel, but because I don't know for sure, I won't make any assumptions.
