If you do a search in BYC for pickled egg recipes, you will turn up a lot of threads.

I prefer mine pickled with beets. Fill a quart jar with beets that have been canned or pickled and hard boiled eggs. Fill the jar with a boiled mixture of equal parts of water, vinegar and sugar (for example 1 cup water, 1 cup vinegar and 1 cup sugar). Seal jar with a lid and canning ring. Refrigerate for a couple of days.

For the naysayers, it is good that we all have different tastes. I like pickled eggs. If you don't like them that is fine.

My entire family loves pickled eggs!! And I'm thinking instead of buying them I need to start making them. I have over 60 hens, so I'll have plenty of eggs to work with

Funny that this topic came up because just this past weekend I was at Sam's looking at the pickled eggs and wondered what the process was. An elderly woman gave me a tip. She said buy pickled beets, once you've eaten the beets, add your boiled eggs and a little more vinegar
