You can usually tell them apart by looking at the soles of their feet: yellow for Jersey Giants, white for Australorps. The color difference is more obvious as they get older, so they may have to grow a bit before you can tell.
Regarding sexing, I don't think there is any way to be sure in the near future, unless you want to try DNA sexing. For that, you get a little sample of blood (trim a toenail just a little bit too short, so it bleeds a few drops), and mail it to the place that does the testing, and get your results in a week or so.

To re-visit this point from your first post:We recently bought some barred rock chicks, and they were supposed to be all pullets, but they look different. So we are wondering if there is anyone who could please help sex the chicks.
They might look different because of being different breeds.
I cannot tell the sexes from pictures at this age for those chicks.
