Quail Egg Recipes?

Let's hear your best quail egg recipes! I've got them coming out of my ears right now, and don't know what all to make.

So far, I've made:
-Boiled Eggs (really easy, just boiled the eggs for 3-4 minutes and peeled!)
-Pickled quail eggs (I kind of just make up the recipe on the fly every time... Usually, I do half vinegar, half water, 1/4 cup or so of sugar, and then stuff pickling spices, salt, pepper, dill, onions, and whatever else I'm feeling in a mason jar along with two dozen peeled eggs).
-Egg salad for sandwiches (also another easy one: just add a tablespoon of mustard with 1/2 cup mayo to boiled eggs, and mash. If it is too dry, add more mustard/mayo, if it's too wet, add more eggs. I usually top with chili powder, paprika, salt, and pepper)

Has anyone made a good angelfood cake out of quail eggs before? Any other good recipes?

if I was you, I would soft boil the eggs and use them as a topping for some really good ramen.
 
Do not ever make deviled eggs! Adorable but it took me 2 hours to peel 45! I would think the same on angel food cake (one dozen chicken eggs separated without getting yolk in it would be what, 50 quail eggs, to say nothing of being loved for their relatively large yolk, and I routinely break a few while opening them!). They do make lovely omelets though (or a soufflé) or a good pound cake (anything to break eggs and it’s okay!). Then you also put some in the incubator and compound the issue!

It makes peeling a lot easier. I haven't gotten good enough with it, yet. Far too many of the eggs I peel end up with torn whites and exposed yolks. Maybe with practice it'll get better, but I don't think I'd plan to make deviled eggs, yet.
Side note: In the past, I was the one bringing deviled eggs to all of our family gatherings. After I started raising quail, I've just been taking hard cooked quail eggs, sometimes still in the shell.

I have one of those too. I probably get about the same number of mangled eggs with that as I do peeling by hand, so it's totally worth it.

I have one as well! Soooo worth it for the long days of pickling eggs.

A pound cake is a great idea! I've not tried deviled eggs, but peel them for pickled eggs and it does take forever.

I already have an incubator set up for lots of eggs and still have way too many! It just compounds the issue lol.
 
I got the manual version of that. Wanted to be sure it would work well and I'd actually use it first. Also bought a quail deviled egg tray so I can take them to get togethers as a fun treat. I usually am the deviled (chicken) egg bringer so it's going to be fun to take something different.
Great thread. Can't wait to start using these eggs in recipes.
