I currently have chickens who I use to sell chicks, fertilized eggs, and eventually POL Pullets.

I would like to get other breeds for just egg laying to eat and sell. However, I don’t want my rooster fertilizing those eggs because every time I mention fresh eggs I’m asked if they are fertilized. 9/10 times their nose wrinkles and they don’t want the eggs if there’s a chance they are fertilized. Doesn’t matter if it’s “ridiculous” people have an aversion to them. So do I build two separate coops? One with a rooster and one without? I realize this isn’t an economically sound idea but this is also a hobby for me so I’m not overly concerned about the initial cost. Wondering how other people do it?

You might need to just eliminate those people from your eating egg customer list ;)

As for your goals of hatching eggs, chicks, and POL's you may need separate enclosures anyway, why not one more for infertile eating eggs?
Are you just dealing with one breed or a mixed breed flock?
Need to know more about your goals and plans regarding breed.

If you're going to divide the set up I'd aim for one half being production birds strictly for egg production, and then the other half being the birds you're selling as layers, as chicks, etc.

That said, I wonder if people realize that the same grocery store eggs that make them feel so "safe" can sometimes be fertilized without being marked as such.
