Sprouting sunflower seeds

I'm trying to get the biggest nutritional bang for my buck, but I need a little clarification. Unhulled sun seeds turn into sun seed greens; hulled seeds turn into sprouts, is that correct?
It was my impression that "greens" and "sprouts" are the same thing. Which is better? Unhulled is cheaper, but from my reading it seems like the seed isn't good, just the greens that come out of it. That doesn't sound right, common sense speaking. I also assume that the unhulled are more nutritious and less likely to go rancid since they are still protected by the shell until sprouting.
Can someone guide me please?

Ok, good. Next question; do you dehydrate yours after sprouting to prevent molding?
Also, can you describe the way you do it? I've sprouted spelt for personal use per Nourishing Traditions method and am curious if it's any different than that.
