Starting Small in Barbados

Hi there,
I am from Barbados in the Caribbean and am new to keeping chickens, just started at the end of December. So far I have two red layers (possibly Red Star variety.) of about a year old that I got from a commercial egg producer. So far they produce one egg each, every day. They live in a coop I made using plans from Ana White (ana-white.com/2016/07/free_plans/small-chicken-coop-planter-clean-out-tray-and-nesting-box) and are allowed to roam around a fenced in area of about 4,000sqft. during the day.
I am also into aquaponics and dabble in photography.

I just watched a cooking/food type show the other day that was located in Barbados.
I made a pepper sauce that I saw on the show...A lady named Margaret Hercules made the sauce on the show. You wouldn't happen to know the market she works in would you?
I'd love to get my hands on some of her sauce.
