Sunflower and Egg Whites! Try it!

Try this! Next time you crack an egg, put a shelled sunflower seed in the eggshell. Don't wash the shell. When the egg white left in the eggshell dries, it should turn a very vibrant green color. It happens because sunflower seeds have lots of chlorogenic acid in them. (1.9–3.1%) All plants have chlorogenic acid in the leaves, but sunflowers have it in the seeds. Under moist and alkaline conditions, chlorogenic acid binds with proteins to form green pigments.
I discovered this very randomly, and researched the reaction. I thought it was very interesting!
